Mix glutinous rice flour, plain flour, sugar, yeast and water.

50 g Glutinous rice flour90 g Plain flour45 g Sugar3 g Yeast90 ml Water

Add oil and red coloring, knead into a smooth dough.

20 ml Cooking oil1.3 g Red colouring
Shaping

Divide into equal portions, shape into rounds and flatten slightly on baking paper.

Rest until slightly puffy.

Steam over medium heat for 12-15 minutes.

Chef's Tips
  • If the weather is too cold, extend the fermentation time.
  • Turn off the heat and leave the lid slightly open for 2–3 minutes. This prevents collapse and condensation.
