Thaw the frozen spring roll pastry at room temperature.

Whisk the eggs in a bowl.

Lay out one piece of spring roll pastry and brush a thin layer of egg wash evenly across it.

Place a sheet of nori on the egg-washed pastry. Press lightly to ensure they are fully bonded.

Brush another layer of egg wash on top of the nori, then place another piece of spring roll pastry on top.

Use scissors or a blade to cut the bonded sheets into small rectangular pieces.

Heat oil in a pan over medium heat. Reduce to medium-low and add the seaweed pieces in batches.

Fry until golden brown, then remove and drain excess oil.

Let cool completely on oil-absorbent paper before storing in an airtight container.

  • Prevent Drying: Keep the spring roll pastry covered with a damp cloth during the process to avoid cracking.
  • Check Oil Temperature: Drop a small piece of pastry in; if it floats immediately and bubbles, the oil is ready.
  • Keep it Crispy: Ensure the crackers are completely cooled before putting them in an airtight container, otherwise they will turn soggy.
